Paris House was transported, timber by timber, from the French capital to its new home on the Duke of Bedford’s estate at Woburn Park more than a century ago, and now sits resplendent, overlooking 22 green acres and grazing muntjacs.

It is owned and run by Chef Phil Fanning and his wife who are passionately driven to offering exquisite food. But a dining experience here is even more than that. The kitchen, expertly masterminded by Head Chef Paul Lobban, works its magic across a series of tasting menus.

From July 9 three new seasonal menus are unveiled. Each has been carefully crafted to showcase wonderful fresh ingredients whilst providing an informative and entertaining culinary journey. This season is devoted to the plethora of beautiful fresh fruit and vegetables that are at their best this time of year. The kitchen garden - just a few steps from the kitchen - is used to provide the freshest of herbs, edible flowers and baby vegetables. Many wild ingredients found on and around the Woburn Estate also feature here and there! The Michelin star menus, based around natural flavour combinations, blend modern culinary techniques with traditional foods - and some less traditional - to deliver a stylish and innovative offering. And only the highest quality locally sourced produce is permitted anywhere near the kitchen.

After agreeing that we were ‘up for a bit of fun’ our tasting menu was served up to us at the Chef’s Table:

TOM YUM: Duck gyoza, pickled duck tongue & squid noodles

MACKEREL: Cucumber, oyster leaf, dill & butter milk

HAMACHI: Red dulse, olive oil & miso

RED PRAWN: Sauce romesco, green olive & wet almonds

SALMON: Tomato, basil & sand eel

HOGGET MEZZE: Hummus, walnut, mint & falafel

STRAWBERRY: Clotted cream, lime & cut grass

THAI GREEN CURRY: Pineapple, coconut & coriander

The dining room oozes elegance and it’s hard to leave feeling anything other than pampered following this unique and indulgent dining adventure.
